Taglish. It's actually the official name to an unofficial language; a blend of Tagalog and English, spoken by locals.
To us, that language is spoken best through food. So we created a menu in homage to the culture. It's a mix of home-cooked Filipino and American expression. Or in other words, just good food that's meant to be shared.
The Language of Food
Chef Mike Collantes has a diverse culinary background that has shown his flexibility with concepts and styles of cuisine that range from Michelin 3 stars fine dining to hotel resorts, banquet catering and multi unit QSR. His past 15+ years of experience defines him as a chef searching to work for and with some of the most highly regarded Michelin starred kitchens, chefs, and up and coming cooks.
Some of his experience includes working with Chefs Jennifer Carroll, Wolfgang Puck, Joel Robuchon, Eric Ripert, and Masa Takayama, Chris Kajioka. As well Mike has staged with some amazing friends and chefs along the way including Alinea, Laurent Gras' L2o, Spago, Le Bernadin, Morimoto.
